What is Green Sencha Green Tea?

China Sencha Green Tea is a type of green tea inspired by traditional Japanese Sencha Tea but produced in China, primarily in the provinces of Zhejiang, Anhui, and Fujian. This tea is crafted using the same methods as its Japanese counterpart, resulting in a fresh, grassy flavour with a gentle sweetness and a smooth, mellow character.

The name “Sencha” comes from the Japanese words “sen,” meaning “infused,” and “cha,” meaning “tea.” It refers to the method of preparing the tea by infusing whole leaves in hot water, rather than grinding them into powder as with matcha.

The processing of China Sencha Green Tea begins with freshly picked tea leaves, which are quickly steamed to prevent oxidation and preserve their vibrant green colour. After steaming, the leaves are carefully rolled into thin, needle-like shapes and then dried.

This process locks in the tea’s natural flavours and nutrients, resulting in a bright, refreshing cup with a clean finish. The combination of Chinese terroir and Japanese technique gives China Sencha its unique character, highlighting the difference between Sencha and green tea, and making it a popular choice among tea enthusiasts.

History of Sencha Green Tea

A fascinating story of cultural exchange and adaptation. While Sencha originated in Japan in the 18th century, its popularity and distinctive processing methods eventually made their way to China, a country with its own ancient and diverse tea traditions.

Chinese tea producers began crafting Sencha style green tea in the late 19th and early 20th centuries, primarily to meet the growing demand from Japanese and international markets. The provinces of Zhejiang, Anhui, and Fujian became the main centres for producing China Sencha, thanks to their ideal climates and long-standing expertise in the cultivation.

Unlike traditional Chinese green teas, which are typically pan-fired to halt oxidation, China Sencha is steamed, mirroring the Japanese method. This steaming process preserves the tea’s bright green colour and fresh, grassy flavour. The leaves are then rolled into slender, needle-like shapes and carefully dried, resulting in a tea that closely resembles its Japanese counterpart but with subtle differences influenced by Chinese terroir.

Today, China Sencha Green Tea is enjoyed worldwide for its refreshing taste and vibrant appearance. It stands as a testament to the enduring influence of Japanese tea culture and the adaptability of Chinese tea artisans, who have embraced and refined the Sencha style to create a unique and popular green tea variety.

How to Brew Sencha Green Tea

  1. Measure the Tea Use 1 teaspoon (about 2 grams) of loose leaf Sencha green tea per cup (200ml) of water.
  2. Heat the Water Bring fresh water to a boil, then let it cool to around 75–80°C (167–176°F). Using water that’s too hot can make the tea taste bitter.
  3. Add the Leaves Place the Sencha leaves into your teapot or infuser.
  4. Pour and Steep Pour the hot water over the leaves. Let the tea steep for 1–2 minutes. For a lighter flavour, steep for 1 minute; for a stronger taste, steep up to 2 minutes.
  5. Serve and Enjoy Pour the tea into cups and enjoy immediately. You can re-steep the leaves 1–2 more times, adding a little extra time for each infusion.

Enjoy the fresh, grassy taste of Sencha Green Tea with every cup!

Tasting Notes

Offering a bright, refreshing flavour profile with a delicate balance of sweetness and gentle astringency. The initial taste is grassy and vegetal, often described as reminiscent of fresh-cut grass or steamed greens.

Subtle notes of seaweed and a hint of umami add depth, while a light, natural sweetness lingers on the palate. The finish is clean and crisp, leaving a pleasant, invigorating aftertaste. Sencha’s vibrant green liquor and smooth mouthfeel make it a truly uplifting and satisfying cup.

Caffeine in China Sencha Green Tea

Containing a moderate amount of caffeine compared to other teas. On average, a typical cup (200ml) of Sencha provides around 20–30 milligrams of caffeine, though this can vary depending on the brewing time, water temperature, and the amount of tea used.

This level of caffeine is less than that found in black tea or coffee, making Sencha a suitable choice for those seeking a gentle energy boost without the jitters. The presence of the amino acid L-theanine in Sencha also helps promote a calm, focused alertness, balancing the effects of caffeine for a smooth and refreshing experience.
